Ingredients
  

For the Taco Shells
  • 10 small flour tortillas 5 to 6 inches
  • 3 tablespoons unsalted butter melted

  • 1/3 cup powdered sugar

  • 12 vanilla sandwich cookies such as Golden Oreo-style cookies

Method

  6. Make the cheesecake filling: Beat the softened cream cheese, powdered sugar, vanilla extract, and lemon juice until smooth and creamy.
  7. Whip the heavy cream: In a separate bowl, whip the cold heavy cream until firm peaks form.
  8. Combine the filling: Gently fold the whipped cream into the cream cheese mixture in two additions.
  9. Add the strawberries: Fold in the finely diced strawberries. If the berries are very juicy, blot them with a paper towel first to prevent excess moisture from loosening the filling.
  10. Prepare the strawberry crunch: Pulse the vanilla sandwich cookies and freeze-dried strawberries in a food processor until you have fine crumbs mixed with small crunchy pieces.
  11. Add the butter: Stir the melted butter into the cookie and strawberry mixture until evenly combined. The mixture should remain crumbly rather than wet.
  12. Bake the crunch: Spread the mixture over a parchment-lined baking sheet and bake at 350°F for 6 to 8 minutes.
