Ingredients

  • 12 oz boneless skinless chicken breast
  • 3 cups broccoli florets
  • 2 garlic cloves minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon paprika
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • Salt as needed

Equipment

  • Large baking sheet
  • Parchment paper, optional
  • Cutting board
  • Chef’s knife
  • Small mixing bowl
  • Measuring spoons
  • Food thermometer

Method

  1. Preheat the oven to 425°F (220°C).
  2. Cut the chicken into evenly sized pieces.
  3. Place the broccoli on a baking sheet and toss with half of the olive oil.
  4. Add the chicken and season with garlic, paprika, Italian seasoning, black pepper, and the remaining oil.
  5. Spread everything into a single layer, leaving some space between the pieces.
  6. Roast for 18–20 minutes, or until the chicken is fully cooked and the broccoli is tender with lightly browned edges.
  7. Check the chicken with a food thermometer for a safe internal temperature.
  8. Remove from the oven and drizzle the fresh lemon juice over the top.
  9. Serve warm.

Notes

  • For better roasted broccoli, avoid putting too much on one pan. Crowding traps moisture and can leave the vegetables soft instead of lightly browned.
  • The lemon is best added after cooking. It gives the chicken a fresher flavor without making the whole dish too sharp.
  • You can use a different suitable herb or spice blend to change the flavor while keeping the recipe simple.

Recipe Tips

Cut the chicken evenly: Different-sized pieces cook at different speeds.
Give the broccoli room: A little space helps it roast instead of steam.
Do not overcook the chicken: Start checking near the end of the cooking time rather than leaving it in the oven longer than necessary.
Taste before serving: A small amount of lemon or seasoning at the end can make a big difference.

Easy Substitutions

Broccoli can be replaced with another suitable non-starchy vegetable.
Italian herbs can be swapped for rosemary, parsley, thyme, or another seasoning you enjoy.
For readers following a structured meal plan, check substitutions and portions against the current plan guidance before making changes.

Storage

Store leftovers in an airtight container in the refrigerator and use within the recommended food-safety timeframe.
Reheat gently so the chicken does not dry out.

Serving Suggestion

Serve the chicken and broccoli together while warm, with the lemon added just before eating.
It also works well as a simple meal-prep option because the two main components can be cooked at the same time.
