- Place the chicken pieces in a bowl. Add paprika, garlic powder, black pepper, and salt. Toss until the chicken is evenly coated.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for about 5–7 minutes, turning occasionally, until browned and cooked through. Transfer the chicken to a plate.
- Add 1 teaspoon of oil to the same skillet. Add the onion, carrot, and bell pepper. Cook for about 3 minutes, then add the broccoli and garlic. Continue cooking for another 3–5 minutes, until the vegetables are tender but still slightly crisp.
- Return the cooked chicken to the skillet and toss with the vegetables. Cook for another 1–2 minutes so the flavors come together.
- Divide the warm cooked rice between two bowls. Top with the chicken and vegetables. Finish with fresh lemon juice and parsley or cilantro if desired.
Notes
Avoid overcrowding the skillet so the chicken and vegetables can brown properly. Cut the vegetables into similar-sized pieces for more even cooking. Taste before serving and adjust the seasoning, lemon juice, or herbs to your preference.
