For the Cake
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1½ teaspoons ground cinnamon

  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • ½ cup light brown sugar packed
  • ⅔ cup neutral vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups finely grated carrots
  • 1 cup crushed pineapple well drained
  • ½ cup shredded coconut optional
  • ½ cup chopped walnuts or pecans optional
For the Cream Cheese Glaze
  • 4 ounces cream cheese softened
  • 2 tablespoons unsalted butter softened
  • 1½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 –2 tablespoons milk
  • Small pinch of salt

Method
 

  1. Prepare the oven and pan: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan and line the bottom with parchment paper.
  2. Drain the pineapple: Place the crushed pineapple in a fine-mesh strainer and gently press out excess juice. Keep the pineapple moist rather than squeezing it completely dry.
  3. Prepare the dry ingredients: Whisk together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt in a medium bowl.
  4. Mix the wet ingredients: In a large bowl, whisk the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla until smooth.
  5. Add the carrots and pineapple: Stir the finely grated carrots and drained crushed pineapple into the wet mixture. Fold in the coconut and chopped nuts if using.
  6. Combine the batter: Add the dry ingredients to the wet mixture and gently fold with a spatula just until the flour disappears. Do not overmix.
  7. Bake: Spread the batter evenly in the prepared pan and bake for 35–40 minutes, or until the center is set and a toothpick inserted into the middle comes out with a few moist crumbs.
  8. Cool: Let the cake cool in the pan for about 15 minutes, then transfer it to a cooling rack and allow it to cool completely.
  9. Make the glaze: Beat the softened cream cheese and butter until smooth. Gradually mix in the powdered sugar, then add vanilla and a pinch of salt.
  10. Adjust the glaze: Add milk a little at a time until the cream cheese mixture reaches a smooth, spreadable or drizzle-friendly consistency.
  11. Finish the cake: Spread or drizzle the cream cheese glaze over the completely cooled cake. Add toasted coconut or chopped nuts on top if desired.
  12. Serve: Slice and serve once the glaze has set slightly. Refrigerate leftovers in a covered container.

Notes

  • Finely grate the carrots for a softer, more evenly distributed crumb.
  • Drain the pineapple well because excess juice can make the center too wet.
  • Do not overmix once the flour has been incorporated.
  • Cool completely before glazing so the cream cheese glaze does not melt.
  • Leave out coconut or nuts if you prefer a simpler cake.
  • Check the cake early because oven temperatures can vary.

Storage

Store the glazed cake in an airtight container in the refrigerator for several days. For longer storage, freeze the unfrosted cake tightly wrapped and add the cream cheese glaze after thawing.
