Fever Tree Paloma Recipe

This fever tree paloma recipe combines tequila, fresh lime juice, grapefruit juice, and Fever-Tree Sparkling Pink Grapefruit for a bright, fizzy, citrusy cocktail. It is quick to make directly in a highball glass, with no cocktail shaker required.

Ingredients
  

  • 2 oz blanco or reposado tequila
  • 1/2 oz fresh lime juice
  • 1 oz fresh grapefruit juice
  • 4 oz Fever-Tree Sparkling Pink Grapefruit
  • 1/4 oz agave syrup optional
  • 1/2 oz orange liqueur optional
  • Ice as needed
  • Coarse or flaky salt for the rim
  • Grapefruit wedge or peel for garnish
  • Lime wheel optional

Equipment

  • Highball or Collins glass
  • Jigger or measuring tool
  • Bar spoon
  • Citrus juicer
  • Small plate, for the salt rim

Method
 

  1. Prepare the glass: Run a lime wedge around the rim of a highball or Collins glass. Dip the rim into coarse or flaky salt, using a half-salted rim if preferred.
  2. Add tequila and citrus: Pour the tequila, fresh lime juice, and grapefruit juice into the glass. Add agave syrup or orange liqueur if you want a slightly sweeter and fuller flavor.
  3. Add ice: Fill the glass generously with fresh ice. Large ice cubes work well because they melt more slowly and help keep the Paloma cold.
  4. Stir the base: Gently stir the tequila and citrus mixture to combine the flavors before adding the carbonated grapefruit mixer.
  5. Add Fever-Tree: Slowly pour in the Fever-Tree Sparkling Pink Grapefruit. Stir gently once or twice from the bottom of the glass to keep as much carbonation as possible.
  6. Garnish and serve: Add a grapefruit wedge, grapefruit peel, or lime wheel. Serve immediately while the drink is cold and fizzy.

Notes

For the easiest version: Use 2 oz tequila, 1/2 oz fresh lime juice, and 4 oz Fever-Tree grapefruit soda over ice.
For more grapefruit flavor: Add 1 oz fresh grapefruit juice to the basic recipe.
For a less sweet Paloma: Skip the agave syrup and use fresh lime juice to balance the grapefruit mixer.
For a brighter cocktail: Blanco tequila works especially well with fresh grapefruit and lime.
For a richer flavor: Reposado tequila gives the Paloma a slightly warmer and fuller character.
For better carbonation: Always add the Fever-Tree mixer last and avoid excessive stirring.
For a spicy variation: Add thin jalapeƱo slices and use a chili-lime salt rim.
For a mocktail: Leave out the tequila and combine Fever-Tree Pink Grapefruit with fresh lime and ice. Add a splash of sparkling water for a lighter finish.

Storage

A finished Paloma is best served immediately because the carbonation gradually fades. If preparing ahead, combine the tequila, grapefruit juice, and lime juice and refrigerate. Add ice and Fever-Tree just before serving.
