Ingredients
  

Pasta & Filling
  • 8 oz cavatappi pasta
  • 6 oz shrimp peeled and deveined
  • 4 oz andouille sausage sliced
  • ½ bell pepper diced
  • ¼ red onion diced
  • 1 small tomato diced
  • 1 tbsp cooking oil
  • ½ tsp Creole or Cajun seasoning
  • ¼ tsp black pepper
Creamy Cheese Sauce
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • cups milk
  • 1 cup shredded cheddar cheese
  • ½ cup Monterey Jack cheese
  • ¼ tsp black pepper
  • Creole seasoning to taste
  • Salt only if needed
Chili-Butter Breadcrumbs
  • ½ cup breadcrumbs
  • 1 tbsp butter
  • ¼ tsp chili seasoning
  • Small pinch of salt

Equipment

  • Large pot – for cooking the pasta

Method
 

  1. Cook the cavatappi: Boil salted water and cook the pasta until just tender. Drain and save a little pasta water.
  2. Brown the sausage: Heat a large skillet over medium heat. Add the sliced andouille sausage and cook until lightly browned around the edges. Remove and set aside.
  3. Cook the shrimp: Add the shrimp to the same skillet and cook until opaque and just cooked through. Remove quickly so it stays tender.
  4. Sauté the vegetables: Add the bell pepper and red onion. Cook until slightly softened. Add the diced tomato near the end and cook briefly.
  5. Start the cheese sauce: Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for about 30 seconds.
  6. Add the milk: Slowly pour in the milk while whisking. Keep stirring until the mixture starts to thicken.
  7. Melt in the cheese: Lower the heat and gradually stir in the cheddar and Monterey Jack until the sauce is smooth.
  8. Season the sauce: Add black pepper and a little Creole seasoning. Taste before adding salt because the cheese and sausage already contain salt.
  9. Combine the pasta: Add the cooked cavatappi to the cheese sauce and stir until evenly coated.
  10. Add the filling: Fold in the sausage, shrimp, peppers, onion, and tomatoes. Add a small splash of pasta water if the sauce feels too thick.
  11. Make the breadcrumbs: Melt butter in a small skillet. Add breadcrumbs and chili seasoning. Stir until golden and crisp.
  12. Finish the dish: Spoon the creamy pasta into bowls and sprinkle the chili-butter breadcrumbs over the top while they are still crisp.

Notes

  • Do not overcook the pasta. It will continue cooking when mixed with the hot cheese sauce.
  • Cook the shrimp quickly. Remove them as soon as they turn opaque to avoid a rubbery texture.
  • Keep the cheese sauce gentle. Once the cheese goes in, avoid boiling the sauce.
  • Save some pasta water. It is an easy way to loosen the sauce without making it watery.
  • Add breadcrumbs at the end. Mixing them into the pasta too early removes their crunch.
  • Taste before adding salt. Andouille sausage, cheese, and Creole seasoning can already bring plenty of seasoning.
  • Want more heat? Add a little extra Creole seasoning or chili powder.
  • Want it milder? Use less seasoning and choose a mild sausage.

Ingredient Substitutions

No cavatappi? Use rotini, fusilli, penne, or elbow macaroni.
No shrimp? Leave it out and add more sausage or vegetables.
No andouille sausage? A smoked sausage can work, although the flavor will be slightly different.
No Monterey Jack? Use more cheddar or another good melting cheese.
Want extra vegetables? Add a little more bell pepper, onion, or another vegetable that cooks well with the pasta.

Storage

Refrigerate: Store leftovers in an airtight container for up to 3 days.
Reheat: Warm gently in a skillet or saucepan with a small splash of milk. Stir until creamy again.
Breadcrumbs: Keep extra breadcrumbs separate when possible so they stay crisp.
