Method
 

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.
  2. Make the garlic butter. Mix the softened butter, minced garlic, and chopped parsley in a small bowl until evenly combined.
  3. Prepare the crab. Drain the lump crab well and gently check for any pieces of shell. Keep the crab in noticeable pieces instead of breaking it into a paste.
  4. Make the creamy topping. Add the mayonnaise, grated Romano cheese, lemon juice, lemon zest, parsley, salt, and black pepper to a large bowl.
  5. Mix until combined. Stir the cheese mixture until it becomes thick and spreadable.
  6. Fold in the crab gently. Mix just enough to distribute the crab without crushing the larger pieces.
  7. Cut the bread. Slice the sourdough loaf lengthwise into two long halves and place them cut-side up on the baking sheet.
  8. Brush with garlic butter. Spread the garlic butter evenly over the exposed surface of both bread halves.
  9. Add the crab mixture. Spread the topping evenly from edge to edge. Keep the layer reasonably even so the bread and topping cook together.
  10. Bake the crab bread. Place the tray in the oven and bake for about 10 minutes, or until the topping is hot and the cheese has melted.
  11. Brown the top if needed. For a more golden finish, place the bread under the broiler for 1–2 minutes. Watch closely because the cheese can brown very quickly.
  12. Rest briefly before slicing. Let the bread cool for a few minutes, then cut it into smaller pieces.
  13. Serve warm. Finish with a little fresh parsley or lemon zest if desired.
