Ingredients

  • 1 lb chicken livers trimmed and patted dry
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika optional
  • A pinch of cayenne pepper optional

Equipment

  • Air fryer
  • Mixing bowl
  • Measuring spoons
  • Kitchen tongs
  • Paper towels
  • Instant-read meat thermometer

Method

  1. Prepare the chicken livers: Trim away excess fat and tough connective tissue. Discard any green-discolored liver, and pat the remaining pieces dry with paper towels.
  2. Season the livers: Place them in a bowl with olive oil, garlic powder, onion powder, salt, black pepper, and optional paprika or cayenne. Toss gently to coat.
  3. Preheat the air fryer: Set the air fryer to 400°F (200°C), following your appliance's preheating instructions.
  4. Arrange in the basket: Place the seasoned livers in a single layer, leaving space between the pieces for air circulation.
  5. Air fry: Cook for approximately 10–12 minutes, turning the pieces halfway through.
  6. Check for doneness: Use an instant-read thermometer to confirm that every piece reaches an internal temperature of 165°F (73.9°C). Continue cooking if necessary.
  7. Serve warm: Transfer the cooked livers to a clean plate and serve with your favorite sides or dipping sauce.

Notes

  • For a milder flavor: Optionally soak the livers in milk or buttermilk in the refrigerator for 30–60 minutes. Drain and pat dry before seasoning.
  • For even cooking: Separate larger pieces and cook in batches if the basket is crowded.
  • For food safety: Do not rely on color alone to determine doneness. Chicken livers must reach 165°F throughout.
  • For leftovers: Refrigerate promptly in a covered container and use within 3–4 days. Reheat leftovers to 165°F.
