  • 3 cans pinto beans 15 oz each, drained and rinsed
  • 1 small yellow onion finely chopped
  • 2 garlic cloves minced
  • 1 tablespoon vegetable oil
  • 1 cup chicken or vegetable broth
  • ½ cup water
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional
  • 1 teaspoon hot sauce optional
  • 1 bay leaf
  • Salt to taste

Method
 

  1. Sauté the onion: Heat oil in a saucepan over medium heat. Add onion and cook for 3–4 minutes until softened. Add garlic and cook for 30 seconds.
  2. Add seasoning: Stir in Cajun seasoning, smoked paprika, onion powder, and black pepper. Cook for about 20 seconds.
  3. Add the beans: Stir in the drained pinto beans, broth, water, and bay leaf. Add cayenne and hot sauce if using.
  4. Simmer: Bring to a gentle simmer, then reduce the heat to low. Cook uncovered for 25–35 minutes, stirring occasionally.
  5. Thicken: Mash a few spoonfuls of beans against the side of the pan and stir them back in. This gives the beans a thicker, richer texture.
  6. Finish: Remove the bay leaf. Taste and adjust the seasoning. Let the beans rest for 5 minutes before serving.
Recipe Tips
    Rinse canned beans first to reduce excess liquid and salt.
    Add salt near the end because Cajun seasoning and broth may already be salty.
    Want more heat? Add cayenne or hot sauce gradually.
    For thicker beans, mash more of the pinto beans.
    For a smokier flavor, add a little extra smoked paprika.
    If the beans become too thick, stir in a splash of water or broth.
