- Add the Banza pasta to the boiling water. Cook according to the package directions and start checking the texture toward the earlier end of the cooking time.
- Warm the olive oil in a large skillet over medium heat. Add the chopped garlic and cook for about 30 seconds, just until fragrant.
- Pour in the marinara sauce. Add Italian seasoning, black pepper, and red pepper flakes if using. Let the sauce gently simmer while the pasta cooks.
- Taste the pasta before draining. Banza can become too soft if it is cooked longer than needed, so use the texture as your guide rather than relying only on the timer.
- Reserve some pasta water. Scoop out about ½ cup before draining the pasta.
- Drain the pasta well. Do not let it sit in the colander for several minutes.
- Add the hot pasta directly to the tomato sauce. Toss gently until the sauce coats the pasta.
- Add a small splash of reserved pasta water if needed. This helps loosen a thick sauce and makes it easier to coat the pasta evenly.
- Stir in the Parmesan. Toss again until the cheese is distributed through the sauce.
- Taste and adjust the seasoning. Add more black pepper, Parmesan, salt, or red pepper flakes if the dish needs it.
- Finish with fresh basil. Serve while hot with a little extra Parmesan on top.
